Fritza opens new Sunshine Sweets Bakery —

It’s all smiles and treats at the Sunshine Sweets Bakery. Having seen a need for something different in the community, Christy Fritza started her new business at 61 - 4th St. North.

Fritza was born and raised in Carrington and has been involved in the restaurant business for most of her life. She started off baking with her grandma when she was young and her love for the art grew from there. She said, “I’ve always wanted to own my own restaurant and over the last couple years it has evolved into wanting to have a bakery.”

She started Sunshine Sweets Bakery because she saw a need for a bakery in the community. When the grocery store bakery reduced their hours, she wanted to provide a place for people to get baked goods and just have somewhere for people to relax and enjoy talking to others. Fritza bought the building in early April from Ed Anderson, the previous owner.

Most of her recipes have come from ones she has learned from her grandma, and from there she has expanded by creating different flavors. One of their signature flavors right now is a “peanut butter and jelly Bismarck with strawberry filling and peanut butter frosting.” They have started off with just some basic flavors, and hope to someday have a flavor of the week.

The first few weeks have just been excellent for them, with a bit of a learning curve. Fritza said that everyone has been supportive of them and has voiced their love for the bakery already. Many people from out of town have come in as well and said that they saw the business online and had to come in to try something.

In the future, she hopes to maybe expand the baked goods a bit more. Fritza states that right now they’re “just taking it one day at a time, and trying different things here and there just to see how they go over.”

Hours are 7 a.m. to 4 p.m. Monday-Saturday, with lunch served Monday-Friday. The bakery also has a Facebook page.
